Sambal Cengek

Sambal Cengek (read: chang ek) is a common kind of sambal in Palembang. It is made of ground red chili, red onion, garlic and
shrimp paste mashed together and stir fried together. After that, dried shrimps that was brewed with hot water,  roughly mashed tamarind water, brown sugar, granulated sugar, (sometimes tomatoes and pete or petai ) are added and cooked until half-dry. It can be eaten with rice and various side dishes but most commonly become an addition to special Eid day cooking.
