Paniki chicken is a common food in West Sulawesi households. It is made of chicken that is first marinated with various spices and then stir fried until dry with coconut milk. After it is done stir fried, it is grilled until brown. A word of advice though, don’t ask for paniki in North Sulawesi unless you are interested in unusual food adventure. In North Sulawesi, paniki means a fruit bat. There, fruit bats can be found in restaurants as a side dish.
