Kaledo is a traditional food from Donggala, Palu, West Sulawesi. The food is also known as Donggala’s Cow Leg. The food is similar with sup buntut but the part of the torso served is the leg and it is served with cassava not rice. The bone itself is knee bone filled with marrow. The word “kaledo” derived from Kaili, the language used in Palu which means “not hard”.
